Born in our Lavezzola facility, Golfera Truffle Mortadella reimagines the classic Emilian staple as a luxury delicacy. By infusing our signature “uncured,” premium pork base with the earthy intensity of black truffles, this variety transforms a rustic tradition into a sophisticated gourmet experience. It represents the pinnacle of our artisanal craftsmanship, offering a rich, aromatic profile that is completely free from artificial nitrates and additives, designed specifically for the most refined palates.
This variety is designed for a true gourmet experience. While it retains the signature velvety texture of our classic mortadella, it is enhanced with black truffles. This addition infuses the meat with a deep, earthy, and highly aromatic flavor profile that sets it apart from the milder Plain or Pistachio options.
To complement the rich intensity of the truffles, we recommend pairing this mortadella with creamy cheeses like Burrata, which balances the earthiness perfectly. It is also exceptional served with simple crusty bread and a glass of robust Barolo wine.
Yes. Like our entire Mortadella line, the Truffle variety is "Uncured." We do not use artificial nitrates, nitrites, or preservatives. We rely on the quality of the premium pork and the natural preservation methods of traditional cooking to ensure a clean, safe, and delicious product.
The Truffle Mortadella is a more exclusive, boutique item. While our Plain and Pistachio varieties typically weigh around 11 lbs, the Truffle Mortadella comes in a slightly smaller format with an average weight of 7 lbs, vacuum-packed in halves to maintain maximum freshness and aroma.
Because of the truffle infusion, this mortadella shines best when it is the star of the show. We suggest serving it thinly sliced on a premium charcuterie board, where its aroma can be fully appreciated. It also adds a luxurious touch when diced into pasta dishes or layered into a gourmet panini.
