The defining characteristic of this salami is the infusion of aromatic fennel seeds. These seeds lift the delicate flavor of the select pork with fresh, anise-like notes, creating a naturally sweet and fragrant profile that distinguishes it from traditional peppery salamis.
Our Fennel Salami offers a tender bite. Because it is pre-sliced thinly, the texture is soft and pleasant, but you will notice a "balanced chew" provided by the visible fennel seeds scattered throughout the meat, adding a delightful textural contrast.
The sweet and herbal notes of the fennel pair exceptionally well with other Tuscan staples. We recommend serving it with Pecorino Toscano cheese, fresh figs to highlight the sweetness, or citrus salads. It is also delicious alongside a slice of focaccia and a glass of Chianti or Sauvignon Blanc.
While it is perfect for cold charcuterie boards, its aromatic quality makes it excellent for light warm dishes. It works beautifully on flatbreads or layered into a panini. However, to preserve its delicate anise notes, we recommend adding it towards the end of cooking or serving it fresh.
